I had a Hawaiian party a few years back and made this wonderful and very easy pork recipe... it takes a while to cook, but can be made a day ahead and reheated.
HAWAIIAN PORK
Pork butt* (any size to fit your needs)
liquid smoke
kosher salt
All you do is take the pork butt and stab a bunch of holes in it. Pour on the liquid smoke (enough to really get the pork really wet). Press the salt onto the pork (enough to season the meat throughout). Rub it in. Don't be shy about it.
Wrap the pork in 2 layers of foil, place in pan (in case it leaks) and bake in the oven at 350 degrees F for a couple of hours (depending on the weight... cook until temp is about 165 degrees F). Let it sit for about 15 minutes and unwrap.
Now for the fun part... grab a couple of forks and tear the meat apart... shred it. It's good to take out your aggression on. Place the shredded meat in a pan and cover with juices.
Serve or refrigerate and heat and serve when you need it.
*I made it for about 30 people... I got a 25-30 lb pork butt, used about 1/2 a bottle of liquid smoke and a few handfuls of salt. Everyone loved it. It works on just about any pork roast, but the leaner the cut, the dryer it comes out... I make it all the time in much smaller quantities now.
I also served up some easy staples... mashed sweet potatoes and tropical fruit salad. Rice pudding, or coconut pudding are good desserts. Really, anything with coconut, pineapple, or nuts make good island desserts.
