Thank You: Helm's bakery cream puffs

I'm glad that people on the net remember this part of our childhoods in California. We also had Milk deliveries, and donut deliveries on Saturday mornings by the boy scouts. We also went to the bakery every year on a field trip in elementary school in Lawndale, CA.

HOWEVER, in my search for the H's cream puff recipe, the important part is not EXACTLY the shell, it's what was inside. Custard? Whipped cream? I've tried both with this recipe and they don't hold together like those our Helmsman pulled from his cooler that were so good!
