This is more work but the recipe is different. You can split the time over two days if you like;
walnut kipfel (makes 90)
part 1:
4 cups sifted flour
1 1/4 cup margarine (or part butter)
4 egg yolks
using knoves or pastry blender mix flour and butter then add yolks.
part 2:
1/2 cup milk
2 pachages of yeast (dry powder)
2 tbls white sugar
mix yeast in warm milk (don't stir just sprinkle yeast in milk) add sugar as yeast rises
part 3 filling:
1 1/2 cup crushed walnuts
1 1/2 cups white sugar
4 egg whites (beaten just until foamy not stiff) mix walnuts and sugar together and add to foam egg whites. mix well.
Mix part 2 with part 1 until you have a smooth ball of dough. Divide into thirds and divide each third into 30 balls (3 x 30 = 90)
If you make the kipfel over two days stop here and freeze the balls over night, otherwise continue without the freezing.
Roll each ball separately into a 1/4-inch thick patty (oval shaped). put a spoon full of filling (part 3) on each. spread the filling lengthwise not just in the center. roll up the patty and shape into a crescent.
Put onto a greased baking sheet and bake at 300 degrees for about 20 minutes. While still warm roll into icing sugar.
