Recipe: Herb-Marinated Olives

1/2 cup olive oil
1/3 cup sherry vinegar (or other flavored vinegar)
1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
1 teaspoon fresh (or dried rosemary)
1 1/2 teaspoons fresh chopped oregano (or 1/2 teaspoon dried oregano)
2 garlic cloves cut into slivers
1 dried red pepper pod
1 (8-ounce) jar Kalamata olives, drained (or one 7 1/4-ounce can colossal ripe, pitted black olives, drained)
1 (7 ounce) jar green pimento-stuffed olives, drained
Combine the marinade ingredients in a bowl; stir well. Place olives in a large Ziploc bag. Pour marinade over olives. Seal bag and marinate in the refrigerator 8 hours, or up to 5 days, turning occasionally.
