Dear Carolyn,

Many Thanks for your lovely comments,I,m so pleased you liked the recipes and Yes the Party was a success and all the food *Went!*For the fishcakes sorry the typing gremmlin(good friend of mine!!)crept in,it is 2-4 tsp of finely chopped lemon grass not 24!!!!!!as you pointed out ,try it with 2 tsp first then work your way up as it is is quite tangy.The consistancy of the fish cakes I like to be quite lumpy (as I like a bit of texture to it)but a lot of peaple like it quite smooth so its up to you.Just pulse it in a food processor for short bursts til you get it the way you like it.If you like they can be made a few hours ahead and just store them covered in the fridge til you need them.Here is another dipping sauce you can try with them if you like...........

CORIANDER DIPPING SAUCE
************************
1/3 cup cold water
1 tsp sugar
2 Tbls fish sauce
1 Tbls white vinegar(I use rice wine vinegar)
1 small red chilli finely diced
1 Tbls coriander(leaves and stems)finely chopped

Place cold water in a bowl,add sugar til it dissolves.Stir in fish sauce,vinegar,chilli and chopped coriander and combine well.
