GARLIC-SCENTED ZUCCHINI
1 pound (about 4 zucchini) small zucchini, sliced into thin rounds (3 cups)
2 tablespoons vegetable oil
2 teaspoons garlic, chopped
1 teaspoon salt or to taste
1/2 teaspoon granulated sugar
Heat a wok or large deep skillet over high heat. Add oil, and swirl to coat pan. Add garlic, and toss well, until fragrant, about 15 seconds.
Add zucchini, and spread into a single layer. Cook undisturbed for 1 minute, then toss once.
Add salt and sugar, and toss well. Reduce heat to medium, and cook, tossing occasionally, until zucchini are tender but crisp, 2 to 3 minutes more. Transfer to a serving plate, and serve hot or warm.
