Recipe: Hot German Potato Salad (using Betty Crocker scalloped potato mix, 1970's)

HOT GERMAN POTATO SALAD

4 slices bacon
1 pkg. Betty Crocker scalloped potatoes
3 cups water
1 hard boiled egg
3 to 4 tbsp. vinegar
Chopped fresh parsley (optional, for garnish)

Fry bacon in 10 inch skillet until crisp; drain on paper towels and crumble; set aside. Drain fat from skillet, reserving 3 tbsp.

Stir potato slices, sauce mix, and water into skillet; heat to boiling, stirring frequently. Reduce heat; cover and simmer, stirring occasionally, until potatoes are tender, about 25 minutes.

Chop egg white; set aside. Press yolk through sieve and set aside.

Carefully stir egg white, vinegar, bacon, and the reserved bacon fat into the potatoes.

Garnish with sieved egg yolk and, if desired, parsley.

Makes 4-6 servings
