Hot Mexican Dip
1 15 oz. can refried beans (I like the refried black
beans myself!)
1 C. salsa (mild, medium or hot) -- remember, it's a
bridal shower!
1 C. grated cheddar cheese
1 small can sliced or chopped olives
1/2 C. grated monterey jack cheese (optional)
2 Tb. chopped cilantro (garnish)
Mix the beans, salsa, cheddar and olives in a
microwavable bowl. Microwave on high for 1 min.; stir and microwave for another minute. Stir again. If the cheddar isn't completely melted, microwave in increments of 30 seconds until done. Spread onto a large plate at least 1" thick. Sprinkle with the Monterey jack if desired, and sprinkle again with cilantro as garnish. Serve with tortilla chips.
If there's any left over, spoon it into large tortillas with slices of avocado for a great burrito.
