I make a double batch of this recipe, at least, each Christmas and freeze them, after they are cooked. My brother always gets a goodie bag of them and other people request them too. My only problem is keeping them long enough to use for something special. They are wonderful heated in the microwave for just a few seconds and served with toast and eggs for breakfast. My family (and myself) are really bad about getting just a couple out of the freezer for breakfast, and soon there are none.

1 lb. lean sausage (at room temperature), I use hot but mild or medium makes good ones also.
1 cup grated sharp cheese (at room temperature)
2 1/2 cups biscuit mix

Blend sausage and cheese in a large bowl (hands work best here). Add biscuit mix and mix thoroughly. Roll into small balls (1 inch) and bake at 350 degrees for 20 to 30 minutes. Makes about 50 balls. Serve warm or at room temperature.
