The only safe things you are able to can pureed are fruits. Be sure the fruits are packed hot, too, as they go into the jars. They make some really great 4 ounce canning jars that are perfect for baby foods.
Vegetables or meats are not safe to puree and can. They become too thick and can allow botulism to grow. You can safely can them plain in small jars and then puree after opening them. That is what I did for my grandbaby.
Zucchini is not safe to can by itself, either. Same problem, it becomes too thick and dense for proper heat penetration, not even if it is not pureed. Of course, all vegetables must be pressure canned, also.
CANNING BABY FOODS
You may prepare any chunk-style or pureed fruit with or without sugar. Pack in half-pint, preferably, or pint jars
and use the following processing times.
PROCESS TIME FOR BABY FOODS IN A BOILING-WATER CANNER
Hot m 4 ounce jars, half pints and pints
20 minutues.
CAUTION: DO NOT ATTEMPT TO CAN PUREED VEGETABLES, RED
MEATS, OR POULTRY MEATS, BECAUSE PROPER PROCESSING TIMES FOR PUREED FOODS HAVE NOT BEEN DETERMINED FOR HOME USE.
Instead, can and store these foods using the standard processing procedures; puree or blend them at serving time. Heat the blended foods to boiling, simmer for 10 minutes, cool, and serve. Store unused portions in the refrigerator and use within 2 days for best quality.
