Recipe: Huckleberry Muffins

Huckleberry Muffins

Preheat oven to 425 degrees F.

Sift together:

2 cups flour
3 tsp.baking powder
1/3 cup sugar
1 tsp. salt

Stir in to blend well:
1 cup milk
2 eggs, beaten
1 Tbls. shortening, melted

Wash, drain & pick over:
1 cup huckleberries (or blueberries) & dust with 1 Tbls. flour. Stir into batter, turn into greased muffin tins, filling no more than 2/3 full. Bake for 25-30 minutes.
