HUMMINGBIRD CAKE
1 box (2-layer size) yellow cake mix
1 teaspoon ground cinnamon
3 eggs, beaten
1/2 cup vegetable oil
1 teaspoon vanilla
1 cup chopped pecans
1 (8 ounce) can crushed pineapple, undrained
2 cups mashed ripe bananas
Cream Cheese Frosting (recipe follows)
Preheat oven to 350 degrees F. Greased and floured 9 x 13 inch baking pan.
MIX THE CAKE BY HAND:
Combine cake mix, cinnamon, beaten eggs and oil. Stir until well incorporated. Stir in vanilla, undrained pineapple, pecans and bananas. Pour into prepared baking pan.
Bake at 350 degrees F for 23-28 minutes - test the cake after the minimum time with toothpick inserted into center of cake. Should come out clean. Remove to cool in pan on wire rack.
Frost when fully cool.
CREAM CHEESE FROSTING
1/2 cup butter, softened
4 ounces cream cheese, softened
1 (1 lb) box confectioners' sugar
1 teaspoon vanilla
milk (if needed)
For frosting, cream butter and cream cheese, add vanilla, and then blend in the sugar - add a little milk if it seems too stiff. Beat until smooth, then frost cake.
