Recipe(tried): Iced Peanut Butter Bars - not a school recipe, but good!

Darlene, This probably isn't exactly the recipe you are looking for, but try these while you're waiting for the perfect recipe. My kids absolutely love these. The chocolate glaze on the top is unsweetened, but the rest of the bar is sweet enough that it provides the perfect complement.

ICED PEANUT BUTTER BARS

FOR THE BASE:
2/3 cup peanut butter
1/2 cup shortening
3/4 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 cup quick oats, uncooked
FOR THE PEANUT BUTTER LAYER:
1 1/2 cups powdered sugar
1 Tbsp butter or margarine, softened
2 Tbsp peanut butter
3 Tbsp milk
FOR THE CHOCOLATE GLAZE:*
2 squares (1 oz each) unsweetened baking chocolate
2 Tbsp butter or margarine

TO PREPARE THE BASE:
Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan.

Cream together peanut butter, shortening, and sugars. Blend in eggs and vanilla.

Stir together flour, soda, and salt, add to creamed mixture. Stir in oats. Spread in prepared pan.

Bake at 350 degrees F for 20 minutes or until golden brown. Cool completely.

TO PREPARE THE PEANUT BUTTER LAYER:
Mix the powdered sugar, 1 tbsp butter, 2 tbsp peanut butter, and milk together till smooth, spread on cooled cookie base, chill at least 30 minutes.

TO PREPARE THE CHOCOLATE GLAZE:
Combine the baking chocolate and 2 tbsp butter and melt together. Spread over chilled peanut butter layer. Refrigerate about 1 hour or until set.

TO SERVE:
Cut into bars. Let stand at room temperature 15-20 minutes before serving.

*I sometimes substitute 6 Tbsp cocoa and 4Tbsp butter. I find that this amount is skimpy and hard to spread adequately, so sometimes I increase it to 1/2 cup plus 1 Tbsp cocoa and 6 Tbsp butter.

Makes 24 bars
