Impossible Breakfast Pie
From: Bisquick Best Recipes #12

1 pound bulk pork sausage
1/4 cup chopped onion
2 1/2 cups frozen loose-pack hash brown potatoes
1 cup shredded Cheddar cheese (4 ounces)
1 3/4 cups milk
4 eggs
1 cup Bisquick baking mix
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup shredded Cheddar cheese (1 ounce)

Heat oven to 400 degrees F. Grease a 10-inch glass pie plate. Cook sausage and onion, stirring occasionally, until sausage is fully cooked; drain. Mix sausage, potatoes and 1 cup Cheddar cheese in pie plate.

Stir remaining ingredients except 1/4 cup Cheddar cheese with fork until smooth. Pour into pie plate.

Bake about 40 minutes or until knife inserted in center comes out clean. Sprinkle with 1/4 cup Cheddar cheese. Bake 2 minutes longer or until cheese melts. Cool 5 minutes.

Serves 6-8
