Jalapeno Corn Bread Stuffing

Jalapeno Corn Bread
6 cups dry bread cubes
1 lb bulk turkey sausage
1 cup chopped onion
1 1/2 cups chopped celery
1 tsp salt
1 tsp poultry seasoning
1/4 cup seeded and chopped jalapeno
1 cup or more reserved turkey broth or chicken

2 eggs

Prepare corn bread. When cool, crumble into a large bowl. Add bread cubes. In a large skillet over med. heat, saute turkey sausage, onion and celery until sausage loses its red color and is crumbly. Drain all but 1/4 cup fat from sausage. Stir in salt, poultry seasoning and jalapeno. Add sausage mixture to bread mixture and toss to mix well. In a small bowl, beat together broth and eggs; stir into stuffing. Add more broth, if needed, for taste and texture. Lightly spoon stuffing into neck and body cavities. Roast, uncovered, in preheated 325 degree oven 20-22 min per pound, or until internal temp. reaches 180 degrees. Bake remaining stuffing in a greased, covered, 1-1/2-qt. casserole 1 hr. Uncover during the last 10 min. of cooking.
