Recipe: Jiffy Mix Chocolate Fudge (using Jiffy Frosting Mix, microwave)

JIFFY CHOCOLATE FUDGE

1 pkg. Jiffy Frosting Mix
6 tsp. hot water
1/4 cup chocolate chips
1/2 tsp. vanilla extract

Generously butter a 9x5-inch loaf pan.

Blend (dry) frosting mix and hot water in a microwave safe large glass bowl and cover with a paper plate. Microwave on HIGH for 3 1/2 minutes. Remove from microwave and test with candy thermometer to 240 degrees F.

Stir in chocolate chips until all are melted and combined. Cool completely.

Cut in squares and serve.

VARIATION:

PEANUT BUTTER FUDGE:
Add 2 tablespoons peanut butter, 8 teaspoons hot water (instead of 6 teaspoons). Microwave on high 4 minutes. Stir in 1/2 cup chocolate chips (instead of 1/4 cup).
