Carrot Casserole
8 cups sliced carrots
2 med. onions sliced ( I chop them )
5 Tbls. butter or margerine, devided
1 can condensed cream of mushroom soup, undiluted
1/2 tsp. salt
1/4 tsp. pepper
1 cup ( 4 oz. ) shredded cheddar cheese
1 cup seasoned croutons
Place carrots in a sauce pan and cover with water; bring to a boil. Cook untill crisp tender. Meanwhile, in a skillet, saute onions in 3 Tbls. butter untill tender. Stir in soup, salt , pepper and cheese. Drain carrots; add to onion mixture pour into a greased 9 x 13 x 2-in. baking dish. Sprinkle with croutons. Melt remaing butter; drizzle over croutons. Bake, uncovered at 350 for 20 - 25 minutes.
And here is the note which appeared under the recipe " Whenever I make this dish, people rave about how good it is. One friend told me I don't usually eat carrots, but this is delicious!" That made my day.
