Recipe(tried): Junior's Pineapple Cheese Pie
Misc. I use this Junior's cheese pie with pineapple topping all the time. Drain the heavy syrup from a 1-pound can of crushed pineapple into a small saucepan. Mound the pineapple on top of the cooled cake or pie. Stir 2 tbsps. cornstarch and 1 tbsp. lemon juice into syrup. Bring to a boil and cook for 1 minute until thickened. Drizzle sauce over pineapple. Since I can only find pineapple in juice and not syrup in my grocery stores, I add with the cornstarch and lemon juice some sugar to taste, 2 tablespoons or so.
