Kathy's Baked Bean Bread
rec.food.veg.cooking/Kathleen Wilber (1994)
This is a quick, tasty bread recipe for your bread machine:
1 Tbsp instant yeast
2 1/4 cups bread flour
1 (16 oz) can of Bush's Vegetarian Baked Beans
1 tsp olive oil
Put in machine, bake. I like this on the dark crust setting.
Recipe fills a 1lb size machine. (Actual loaf weighs 1-1/2 lbs.)
The baked beans contain all the water, sugar, and salt needed for nice bread, add a good additional dose of protein, texture, and a very nice flavor. The beans get smooshed during kneading: you don't see individual beans in the final product.
Good nutrition profile: Total calories per loaf: 1490. Percent calories from fat: 3%; from protein: 16%; from carbohydrates: 81%.
Notes: You may try other brands of vegetarian baked beans, but if Bush's is available, use it: it's non-fat, and has the best flavor, IMHO. If you use another brand, check for added oil: you may want to eliminate the recipe's olive oil if the beans already have some. (Some minimal oil is needed unless you intend to eat the whole loaf right away. It prevents bread from going stale quickly.)
A mix of 1 cup bread flour, 1 cup whole wheat flour, and 1/4 cup gluten flour also works well.
