Recipe: Khaew Neow Dam Piak (Black Sticky Rice Pudding)

Khaew Neow Dam Piak (Black Sticky Rice Pudding)

1/2 cup black (sticky) rice
3 cups water
1 cup coconut milk
1/2 cup sugar

Soak black rice in bowl of fresh water overnight. drain.

Put the soaked rice in a pan with 3 cups water and bring to the boil. Simmer for 30 minutes until rice is cooked, stirring occasionally (if the rice is old, it will take longer for it to cook).

Once the rice is cooked, add the coconut milk and sugar and simmer until mixture is thick and gooey stirring occasionally to keep from burning (15 to 30 minutes).

This can be eaten hot or cold.
Thai people eat it with mango slices on the top yum.
Can be served with thick coconut milk spooned over the top.
More sugar can be added if desired.
