GLAZED ACORN SQUASH
3 acorn squash
3/4 cup chopped nuts (optional)
1/4 cup unsulphured molasses
3 Tbsp. butter or margarine, melted
1 Tbsp. grated orange rind
1/2 tsp. salt
Preheat oven to 375 degrees F. Grease a shallow baking pan.
Wash squash and halve lengthwise; remove seeds and stringy portion. Place squash, cut side down, in prepared baking pan.
Bake in 375 degrees oven for 30 minutes.
While squash is baking, combine remaining ingredients.
Remove squash from oven; turn right side up. Divide the molasses mixture among the halves. Return to oven and bake approximately 30 minutes longer or until squash is tender.
