Recipe: Kirby Cucumber Info

Kirby cucumbers are typically small, from about 3 to 6 inches long. They are also called pickling cucumbers, for their size and great affinity to pickling. The Kirby cucumber is irregularly shaped, with the bumpy, spiny skin typical of cucumbers. Kirby cucumbers lack the waxy skin familiar to other cucumbers, though.

To serve these tasty cukes, scrub gently with a cloth, and trim about 1/2 to 1 inch from the ends. Because of their unique flavor, you can serve these cukes in salads, or marinate in a mixture of cider vinegar, dill and celery seed.
