Kiwi Fruit Muffins

Yield: 16 Servings
4 large very ripe mashed kiwi fruit
2 eggs
1/4 teaspoon vanilla essence
1/2 cup sugar
3 teaspoons lemon juice
1/4 cup oil
1/2 cup skim milk
3 cup self raising flour
Sift flour into large bowl. Blend eggs, sugar and oil then stir in remaining ingredients. Carefully fold into flour. Spoon into sprayed muffin tins and bake at 350F 25 minutes.
