LADY BALTIMORE CAKE
CAKE:
1 cup vegetable shortening
2 cups sugar
3 cups cake flour
3 tsp. baking powder
1 cup milk
5 egg whites
1 tsp. salt
1 tsp. vanilla
FILLING:
1 cup sugar
1 cup sour cream
5 egg yolks
1 tsp. vanilla
1 cup chopped nuts
ICING:
1 cup sugar
3 tbsp. cold water
1 egg white
1 tsp. vanilla
CAKE:
Preheat oven to 350 degrees F. Grease three (9-inch) layer cake pans.
Cream shortening and sugar.
Sift flour, salt and baking powder, add to creamed mixture a little at a time with the milk.
Beat egg whites until stiff and fold into mixture. Add vanilla. pour into prepared pans.
Bake 30 minutes at 350F.
FILLING:
Cook sugar, sour cream and egg yolks together over low heat until thick. Add vanilla and nutmeats. Cool and spread between layers of cake.
LADY BALTIMORE ICING:
Mix all icing ingredients together. Beat in a double boiler over hot water for 4 minutes using an electric mixer. (Takes a long beating time without the mixer.)
