Recipe(tried): Spiced Banana Fruit Cake

SPICED BANANA FRUIT CAKE

3 1/2 cups sifted flour
4 teaspoons baking powder
2 teaspoons cinnamon
2 teaspoons ginger
1 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon baking soda
1 1/3 cups shortening
1 1/3 cups sugar
4 eggs, beaten
2 cups mashed ripe banana
4 cups diced candied fruits
1 1/2 cups chopped nuts
1 cup raisins

Preheat oven to 300 degrees F. Well grease and lightly flour 2 (9-inch) bread pans.

Sift together dry ingredients.

Cream shortening. Gradually blend in sugar. Beat in eggs.

Add flour mixture ultimately with the mashed bananas to the creamed mixture.

Mix candied fruit, nuts, and raisins into batter. Turn into prepared bread pans.

Bake at 300 degrees for 2 hours or until done.
