Layered Supper
6 cups potatoes, thinly sliced
2 cans whole kernel corn, drained
1/2 cup chopped green pepper
1 cup chopped onion
2 cups sliced carrots
1 1/2-2 lb. ground beef or ground chuck
1 (15 oz.) can tomato sauce
1 cup shredded cheese
Place potatoes in buttered casserole dish season with 1 teaspoon salt and 1/4 teaspoon black pepper, sprinkled on top.
Mix corn, pepper and pour on top potatoes. Put onions and then carrots, crumble ground beef over vegetables. Sprinkle 1 teaspoon salt and 1/4 teaspoon black pepper on top. Top with tomato sauce.
Bake in covered casserole dish at 350 degrees for 2 hours. When done uncover and sprinkle with cheese.
Meal in Itself
Servings: 4-6

1 onion, sliced
1 (16 oz.) can whole kernel corn, drained (or 2 cups fresh or frozen)
1 lb. ground beef (doesn't need browning)
1 tsp. salt
1 (16 oz.) jar thick spaghetti sauce
In greased 3 quart casserole, layer potatoes, corn, carrots, onions and beef. Lightly salt each layer. Pour spaghetti sauce over.
Bake covered 350 degrees for 1 3/4 hours.
