Recipe: Lemony Chops (pork or lamb, using tomato juice)

LEMONY CHOPS

2 pounds lamb chops (or pork chops)
2 lemons, unpeeled, sliced
1 onion, sliced
1 green bell pepper, sliced
1 tsp. salt (or to taste)
2 cups tomato juice
Butter or margarine

Place chops in a large pot. Cover meat with sliced lemon, onion and pepper. Sprinkle salt over all, pour in tomato juice, and dot with butter.

Cover tightly and simmer for 1 1/2 hours (or until thoroughly cooked.)

Makes 6 servings
