You could also make it into lasagne. I have used leftover meat loaf in enchilada casseroles. I have also made tortilla soup with it.
I know you said no sandwiches, but if you don't have beef or brown gravy on hand in your freezer, you could buy a few jars and serve open-faced hot meat loaf sandwiches. I can't resist an open-faced meat loaf sandwich (a taste leftover from my childhood, I guess).
