LEMON LUST (LAYERED DESSERT)
CRUST:
1/2 lb. (1 cup) butter, melted
1 cup all-purpose flour
1 cup chopped pecans, divided
LAYER ONE:
1 (8 oz.) pkg. cream cheese, softened
1 (16 oz.) container Cool Whip, thawed, divided
1 cup confectioners' sugar, divided
LAYER TWO:
2 small (3 oz each) or 1 large (6 oz) pkg. lemon instant pudding
2 cups cold milk
Preheat oven to 350 degrees F.
Combine butter, flour, and 1/2 cup of the chopped pecans. Press into 9x13-inch baking dish.
Bake at 350 degrees for 20 minutes. Remove from oven and cool.
FILLING:
(Best if each layer is allowed to chill. before adding next)
Mix cream cheese, 1 cup of the Cool Whip and confectioner's sugar. Beat with mixer until well blended. Spread on crust mixture.
Mix pudding and milk with mixer until it starts to thicken. Pour over cream cheese mixture.
Top with remaining Cool Whip and sprinkle with the remaining 1/2 cup chopped pecans. Chill for 2 hours before serving.
Makes approximately 15 servings
