LEMON RICE (WITH INDIAN SPICES)
I got this recipe from an Indian friend.
1 cup basmati rice
2 cups water
1 tsp coriander seeds
1 tsp sesame seeds
1 tbsp. oil
1/2 cup peanuts
4 green chilies, chopped
1 (1-inch) inch piece fresh ginger, finely chopped
1 tsp mustard seeds (optional)
1 tsp tumeric
salt to taste
1/4 cup lemon juice
Wash rice; cook in 2 cups of water and allow it to cool.
In a skillet dry roast the coriander seeds and sesame seeds. Grind into a powder; set aside.
Heat oil in a pan. Fry peanuts, chilies, ginger, mustard seeds, and tumeric. Add salt to taste.
Remove pan from stove add the lemon juice.
Add cooked rice and finally mix in coriander-sesame powder.
