Little Shells with Carmelized Onion Sauce

7 tbsp. unsalted butter
2 tbsp. olive oil
1 jumbo sweet onion, coarsly diced
2 tbsp. dry vermouth
1 tbsp. fresh thyme leaves
1/2 tsp. salt
1/2 tsp. black pepper
1/2 lb. small shell macaroni
1/4 cup freshly grate Parmesan cheese

In a saucepan over very low heat, combine butter and oil. Add onion, cover and cook, stirring often until onion carmelizes, about 1 hour. Stir in vermouth, thyme, salt, pepper into onion mixture. Cover and cook for 5 minutes. Keep warm over very low heat. Cook shells as directed, until tender but still firm to the bite, about 12-15 minutes. Drain the pasta and toss with the onion sauce. Serve in heated soup plates and sprinkle with parmesan cheese.
