Recipe: Macadamia Bars

I plan to make these for on my dessert table for our Christmas party on Friday night. I got the recipe from Creme de Colorado put out by the Junior League of Denver.

Macadamia Bars (16-20 bars)

Crust:
1/2 cup butter, softened
1/4 cup sugar
1 cup all-purpose flour

In medium bowl, cream together all crust ingredients. Press onto bottom of 9" square pan and bake at 350 degrees for 20 minutes.

Filling:
2 large eggs, lightly beaten
1/2 cup sweetened flaked coconut
1 1/2 cups packed light brown sugar
1 to 1 1/2 cups halved macadamia nuts
2 tablespoons all-purpose flour
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon baking powder

In medium bowl, stir together all filling ingredients. Pour over hot baked crust and bake at 350 degrees and bake for an additional 20 minutes. Cool completely and cut into squares.

The cookbook says, "Moist, chewy and absolutely sinful. Great served with vanilla ice cream."
