Recipe: Magic Puff Sandwiches with 6 Variations (using biscuit mix)
SandwichesMAGIC PUFF SANDWICHES
1 1/4 cups Bisquick baking mix
3/4 cup mayonnaise or salad dressing
1 egg
Ingredients from chosen variation (recipes follow)
6 slices bread
Preheat oven to 450 degrees F.
Mix baking mix, mayonnaise, and egg together. Stir in ingredients from one of the variations (below).
Spread ingredients evenly on each slice of bread; place with filling facing up on an ungreased baking sheet.
Bake until puffy and golden brown, about 10 minutes. Serve immediately.
VARIATIONS:
MEXICAN:
2 cups shredded Monterey Jack cheese (about 8 ounces)
1 (4 ounce) can whole green chilies, drained, seeded and chopped
1 medium tomato, chopped
1/2 cup chopped onion
1 tablespoon chili powder
FRANKFURTER:
4 frankfurters, cut into 1/4-inch slices
2 cups shredded process cheese spread (like Velveeta, about 8 ounces)
1/2 cup sweet pickle relish
1 tablespoon prepared mustard
CHICKEN:
1 cup cut-up cooked chicken
2 cups shredded Cheddar cheese (about 8 ounces)
1 (4 ounce) can mushroom stems and pieces, drained
1/4 cup sliced green onions
1/4 teaspoon salt
Dash of pepper
ITALIAN:
1 (3 1/2 or 4 ounce) package sliced pepperoni, cut up
2 cups shredded mozzarella cheese (about 8 ounces)
1 (2 1/4 ounce) can sliced ripe olives, drained (1/2 cup)
1/2 cup chopped green bell pepper
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
TUNA:
1 (6 1/2 ounce) can tuna, drained
2 cups shredded Cheddar cheese (about 8 ounces)
1/4 cup sliced celery
1/4 cup chopped onion
3 tablespoons lemon juice
VEGETABLE:
2 cups shredded Swiss cheese (about 8 ounces)
1 medium tomato, chopped
1/2 medium cucumber, coarsely chopped
1/2 cup alfalfa sprouts
1/4 teaspoon salt
High Altitude Directions (3500 to 6500 feet): Heat oven to 475 degrees F. Stir 2 tablespoons all-purpose flour into baking mix. Bake 10-12 minutes.
Makes 6-open-faced sandwiches
