Recipe: Polish Chop Suey (Kluski z Kapusta)

POLISH CHOP SUEY (KLUSKI Z KAPUSTA)

1 (12 ounce) package kluski noodles
1/4 cup chopped bacon
1/4 cup minced onion
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 1/2 cups milk
1/2 cup (1 stick) melted butter or margarine
1 teaspoon caraway seed
1 (16 ounce) can sauerkraut
1 pound cooked and sliced polish sausage (optional)

Preheat oven to 325 degrees F.

Cook noodles and set aside.

In small skillet, cook bacon and onion until just crispy. Set aside.

In medium saucepan, heat soup, milk and butter, stirring until smooth. Add caraway seed, reserved bacon mixture, the cooked noodles, sauerkraut and, if using, the sausage.

Pour into 2-quart greased casserole and bake in preheated oven, uncovered, 30 minutes or until heated through.

Makes 4 to 6 servings
