MARINATED TOMATO SLICES
FOR THE DRESSING:
3 Tablespoons olive oil
2 Tablespoons lemon juice
1/4 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
1 teaspoon sugar
Pinch turmeric
FOR THE TOMATOES:
3 tomatoes, sliced
1/4 cup chopped green onion
2 Tablespoons chopped parsley
Combine oil, lemon juice, cumin, salt, pepper, sugar and turmeric in screw-top jar; shake well to blend.
Place sliced tomatoes on serving plate. Sprinkle with onion and parsley. Pour dressing over. Let stand at room temperature 1 hour, then chill well before serving.
Makes 6 servings
