Recipe: Marshmallow Creme Mocha, Unbelievable Fruit Salad, Nan's Cheese Potatoes, Rotini and Brats

mrsfood (11:16:50) : Marshmallow Creme Mocha

2 tsp. of instant coffee (I use 3)
2 tsp. of unsweetened cocoa powder
4 tsp. of sugar
1 tsp. of cinnamon
1-3/4 cups milk
1/4 cup whipped or marshmallow creme (I recommend the marshmallow creme)

In a medium mixing bowl, combine instant coffee, cocoa, sugar and cinnamon. Stir in 1/4 cup milk and blend until thick. In a saucepan, scald remaining milk, add to coffee mixture. Whisk until blended and a froth foams. Pour mixture into cups. Top each with a dollop of whipped cream or marshmallow cream. Serve immediately. (Important to serve immediately)

Kelly,WA (10:55:05) : Unbelievable Fruit Salad

4 small cans mandarin oranges
4 medium cans pineapple tidbits
2 Cup Seedless grapes (washed)
4 small Hershey candy bars (orig. recipe said 5 cent size but now use reg. size not mini)
2 Pint Cool whip or whipped cream
2 Pint Sour cream
4 Package Frozen blueberries dry pack
Or use: 4 pints fresh blueberries

Drain canned fruit. Grate chocolate bars and set aside. Combine whipped cream with sour cream. Fold in fruit and chocolate and serve immediately. Note. All fruit except blueberries if frozen, can be combined and chilled overnight. You can then assemble just prior to serving. Makes 6-8 generous servings. This can also be served as a light dessert.

Roz/La. (07:48:22) : Nan's Cheese Potatoes

10 med. potatoes, peeled
1 (8 oz) carton sour cream
1 (8 0z) pkg. cream cheese
1 1/2 cups grated cheddar cheese
4 Tablespoons butter
1/3 cup chopped chives
salt and pepper to taste

Boil potatoes until tender.
Cream the sour cream and cream cheese together.
Add hot potatoes and beat until smooth.
Add the butter, chives and salt and pepper. Mix well.
Stir in the Cheddar cheese.
Spoon into a well-buttered 2 quart casserole
Bake at 350 degrees for 25 minutes...

This can be made ahead

Kelly,WA (06:21:14) : ROTINI AND BRATS

2 tbsp olive oil
2 onions, chopped
1 large green pepper, chopped
2 cloves garlic, minced
1 large can tomatoes
1 can tomato paste
1 cup water
1/2 tsp salt
1/2 tsp sugar
1 tsp basil and oregano
1/2 tsp pepper
1 lb pkg smoked bratwurst
1 lb pkg rotini

In Dutch oven, heat olive oil and saut onion, green pepper, and garlic until onions are clear. Add liquid from tomatoes, then smoosh each tomato as added. Stir. Add tomato paste, water, and seasonings. Stir and bring to boil. Reduce heat and simmer 10 minutes. Slice each brat Din 1/2 lengthwise, then lengthwise again, then slice across to make iced pieces. Add to sauce, stir and simmer 10 minutes longer. Prepare rotini according to package directions. Drain. Spoon sauce over each serving. Top with grated parmesan cheese to taste.
