I've made meatloaves with mashed potatoes inside .. but I've never had a recipe. My 'guide' was making a meatloaf - maybe 2 to 2-1/2 lbs ground meats, I usually use some Ital. sausage and whatever else we like; season like you would for any meatloaf. Pat the mixture out on a large sheet of foil to about 12 x 10 inch rectangle. Spoon/spread mashed potatoes over the meat mixture (about 1-1/2 cups mashed potatoes - if these are COLD leftovers, I'd warm just a bit). You can also add cheese, or spinach or whteer you like.
Then roll up (like a jelly roll) using the foil as a guide. I would roll from the short end. Pinch edges to seal.
Either place on rack of broiler pan - or put a wire rack over a baking pan (as it will drip fat while it cooks). Place the meatloaf/meat roll - seam side down on the rack. Bake about 1 hour to 1 hr 10 minutes at 350 degrees. You might want to cover - loosely - with foil after the first 30 minutes. use an instant read thermometer to make sure it is done. Let rest about 10 minutes - slice. About 8 to 10 servings.
We usually 'stud' the top of the meat roll with pignoli (pine nuts) or something. Or you can brush with bbq sauce or a glaze - or leave it plain.
This is not a REAL recipe - more or less the way we have made this at times. Nor is it New England. So perhaps you could substitute some seasonings that would be in a New England meat loaf and come up with something your boyfriend would like. Good luck.
