MEAT FOR TACOS
oil
1/2 of an onion, chopped
1 lb lean ground beef
1/2 of a 6 oz. can of tomato paste
1 tbsp chili powder, or to taste
1 tsp cumin, or to taste
In a large skillet, place a small amount of oil. Add the chopped onions and saute only until just soft and clear, DO NOT brown.
Add the meat and cook over medium heat until almost done.
Add the tomato paste and mix well. Season with the chili powder and cumin, mix well. Cook over medium heat for 2-3 minutes. Remove from stove. Do not overcook and dry out!
Place meat in the bottom of fried tortillas and add whatever toppings you prefer, i.e. chopped tomatoes, finely chopped onions, grated cheese, chopped lettuce, sour cream, salsa, hot sauce, etc.
Usually makes enough for six people (This recipe is easily doubled or tripled.)
