Recipe: Melon Wedges (filled with fruit and jello) and Jello with Applesauce

MELON WEDGES

1 cantaloupe or honeydew melon
1 pkg. (4 serving size) Jello brand apricot or orange flavor sugar free gelatin
1 cup boiling water
3/4 cup cold water
1 large banana sliced, 1/2 cup sliced strawberries, or 1 cup (8 1/4 oz.) crushed pineapple in juice, well drained

Cut melon in half; scoop out seeds and drain well.

Dissolve gelatin in boiling water. Add cold water. Chill until slightly thickened.

Stir in fruit. Pour into melon halves. Chill until firm, about 3 hours.

Cut in wedges. Serve with additional fresh fruit, cottage cheese and crisp greens if desired.

NOTE: Chill any excess fruited gelatin in dessert dish.

Makes 6 servings
