MICROWAVE BEAN AND SAUSAGE CASSEROLE
1/4 cup finely chopped onion
1/2 pound low-fat smoked link sausage
1 (15 oz.) can kidney beans, drained and rinsed
1 (15 oz.) can blackeyes, drained
1 tablespoon all-purpose flour
1 (8 oz.) can tomato sauce
1/4 cup dry red wine
2 tablespoons firmly packed brown sugar
2 teaspoons prepared mustard
1/2 teaspoon salt
Dash pepper
Place onion and 1 tablespoon water in small microwave-safe bowl. Cover with plastic wrap and cook on HIGH 1-1/2 minutes.
Cut sausage diagonally into 1/4-inch slices. Arrange on bottom of 1-1/2 quart microwave-safe dish. Layer beans evenly over sausages.
Measure flour into separate bowl; slowly blend in tomato sauce and wine. Add brown sugar, onion, mustard, salt and pepper. Pour over beans in casserole; cover.
Microwave on HIGH 6-7 minutes; stir after 4 minutes. Let stand 2 minutes. Stir before serving.
Makes 5 cups; approximately 4 servings.
