Midwest Corn Bread
1 cup yellow cornmeal -- stone-ground pref
1/4 cup sugar
1 cup all-purpose flour
4 tsp baking powder
1/4 cup vegetable oil
2 eggs
1 cup milk
Pinch of salt
Preheat oven to 425 F. Grease a 9x9" baking pan. Combine cornmeal, sugar, flour and baking powder. Add oil, eggs and milk and beat until smooth. Pour into baking dish and bake for 20 minutes or until golden.
