Recipe(tried): Mussels Steamed in Wine

Main Dishes - Fish, Shellfish
MUSSELS STEAMED IN WINE

1 small minced onion
4 chopped garlic cloves (or more to taste - I use 8 to 10!)
1 Tbsp minced fresh parsley
approx 4 dozen mussels, bearded and in their shells (serves 4-6).
generous sprinkling of ground black pepper
7 Tbsp sweet butter (I usually use salted butter - it works just fine), divided use
1 cup dry white wine

Put onion, garlic and parsley in large heavy kettle or saucepan. Add mussels, sprinkle generously with pepper. Add 4 tbsp butter and pour the wine over all. Cover, steam over low heat until mussels just open (discard any that don't open). Remove mussels to individual bowls or serving dish.

Add 3 tbsp butter to broth, stir, bring just to a boil. Pour broth over mussels and serve.

I've used this for family, friends, and have been called upon to do this for social functions (between 50 and 100 lbs of mussels!) - everybody loves 'em! My personal opinion - you gotta use a lot of garlic, and it's gotta be fresh, not that chopped stuff in a jar.
