Recipe(tried): My contribution: Tex-Mex Spinach Dip

You are all so much fun! Thanks for responding to my request and for all of the great suggestions (Gina, I will definitely look for the brie!) Like all of you, I would have a hard time choosing just one but this recipe is one that goes fast here in Arizona.

Tex-Mex Spinach Dip

1 pkg. (10 oz.) frozen chopped spinach
1 can (14.5 oz.)(Rotel or Williams) diced tomatoes with green chilies
1 pkg. (8 oz.) cream cheese, softened
1 pkg. (8 oz.) shredded Monterey Jack cheese

Thaw spinach; drain well, squeezing until dry.
Stir together spinach, tomatoes, cream cheese and Monterey Jack cheese. Spoon into lightly greased 1-quart casserole. Bake at 350 degrees for 30 to 40 minutes or until hot. Serve with tortilla chips.
