Recipe: Onion Casserole (using barbecued potato chips)

I found this last night while searching for a recipe to use some of the huge, sweet onions I bought at Costco. This one didn't meet our diet requirements, but sounded interesting.

ONION CASSEROLE USING BARBECUED POTATO CHIPS

1 bag barbecued potato chips, crushed
4 large sliced onions (Supersweet onions ONLY!)
2 cups grated cheddar cheese
2 cans cream of chicken soup
1/2 cup milk

Preheat oven to 350 degrees F.

Reserve a small amount of crushed bbq potato chips for topping. Layer half the remaining chips, half the sliced onions and half the cheddar in a casserole that has been sprayed with cooking spray. Repeat layers.

Combine chicken soup with milk. Pour over layers and top with remaining crushed chips.

Bake at 350 degrees F for one hour.
