Recipe(tried): Wonderful Watermelon Pie - Kim - Bless you and your husband - Here is one recipe idea

Here is a recipe I used to make WITH my mom who had Alzheimers. I did all the cutting and measuring... mom stirred the bowl. Sometimes I had to lovingy remind her to keep stirring, but the job got done... even if I had to finish stirring it when she was not watching. I poured the pie into the pre-made crust and put it in the refrig to gel. Mom always had a big grin on her face when we told everyone that she made the pie.
I have made this same pie using FRESH STRAWBERRIES when watermelon was not in season.

Wonderful Watermelon Pie
Makes 8 servings
1 container (12 ounces) frozen non-dairy whipped
topping, thawed
1 box (3 ounces) watermelon-flavored gelatin
1/4 cup water
2 cups watermelon balls
9-inch crumb pie shell
In large bowl, fold whipped topping, gelatin and water together. Fold in watermelon balls. Spoon into crumb pie shell. Chill for 2 hours before serving.
Note: I have used cherry, rasp, and strawberry jello when making this pie.
Again, I applaud you for helping with the care of your grandmother. I was the caregiver of my mom for a number of years. I was soooo happy when my friends would come over to give me a hand. Hugs. Kel
