Recipe: Neecy-Leah Chase's Southern Pecan Pie

Southern Pecan Pie

Pastry for 9 in. pie shell (to follow)
1/2 C unsalted butter, at room temperature
1/2 C sugar
3/4 C light corn syrup
1/4 C honey
3 large eggs, lightly beaten
1 tsp vanilla extract
1 C coarsely chopped pecans
1 C pecan halves
Whipped cream for serving

Line a 9 in pie plate w/the pastry; trim & crimp the edges
decoratively. Refrigerate the pie shell while preparing the
filling.

Preheat oven to 350 deg. Using an electric mixer, cream the
butter & sugar in a mixing bowl. Beat in the corn syrup &
honey, then beat in the eggs & vanilla. Stir in the pecan
pieces. Pour the mixture into the pie shell. Arrange the
pecan halves in concentric circles over the filling. Bake
the pie until the top is golden brown & firm when lightly
pressed in the center, about 55 minutes. Serve accompanied
by a bowl of whipped cream. Makes 8-10 serving

Leah Chase's Pie Crust

1/2 C (1 stick) unsalted butter, cold, cut into small pieces
4 T unsalted margarine, cold, cut into small pieces
2 C unbleached all purpose flour
pinch salt
2-3 T ice water

Early in the morning or one day before you plan to serve the
pie, prepare the crust: Place the butter, margarine, flour,
& salt in a food processor fitted w/a steel blade; process
just until the mixture resembles coarse meal. With the
machine running, add the ice water through the feed tube &
process just until the mixture starts to form a ball. Gather
the dough, wrap in plastic wrap, & refrigerate at least 2 hrs.

Roll out the dough into an 11 in. circle on a lightly floured
surface. Line a 9 in. pie dish with the dough; trim & crimp
the edges decoratively.

Note: the remaining directions in this recipe pertain to
making a prebaked pie shell for a lemon chiffon pie.

Freeze the pie shell for 30 min. Preheat the oven to 375 deg.
Line the pie shell waluminum foil & pie weights or dried beans.
Bake the shell until light golden brown, 20-25 min. Remove the
foil & weghts; cool the shell completely.
