New Potatoes with Peas in White Sauce

My grandmother and mom used to make new potatoes with peas in a thin white sauce with a little salt pork. It's a very basic, farm dish.

Boil new potatoes until done. Saute minced salt pork, add enough butter to make approximately two tablespoons of fat, add two Tbsp flour and stir until blended. Stir in 1 1/2 cups whole milk and cook until thickened. Add potatoes and peas and simmer until well blended. Salt and pepper to taste. Serve in bowls. Makes a great summer meal!
