Onion Strings (like Legal Sea Foods)
rec.food.cooking/Harvey Bennett/1998
I had something like this at Legal Seafood in Boston, and wanted to
duplicate it.
1/2 cup milk
1/2 cup flour
1/2 tsp sugar
1/2 tsp salt
1/2 tsp pepper
1/2 tsp red pepper
1/2 tsp garlic salt
1/2 cup flour
1/2 cup corn meal
1 tsp garlic salt
1 large onion, cut into thin rings and the rings cut in half to form strings.
Mix first group of ingredients into a medium thick batter Put onions in the batter, stir well to cover, and let the onions sit for about half an hour.
Mix remaining flour, corn meal, and garlic salt. Remove rings from batter keeping a small amount of batter on the strings, dredge in the flour/corn meal mixture and fry about 5 minutes until crisp.
If you want the basket effect, you could probably dump the coated strings into a metal strainer and deep fry in the strainer. I usually stir once or twice to keep the strings from sticking together, but the opposite should also work.
