NUTMEG FEATHER CAKE
2 cups sifted all-purpose flour
1 tsp soda
1 tsp baking powder
1 1/2 to 2 tsp nutmeg, freshly ground is best
1/4 tsp salt
1/4 cup butter, room temperature
1/4 cup shortening
1 1/2 cup sugar
1/2 tsp pure vanilla extract
3 eggs
1 cup buttermilk or sour milk
Preheat oven to 350 degrees F. Grease and flour, or spray with Pam, a 13x9x2 inch baking dish.
In a small bowl mix together first five ingredients: set aside.
In a large mixing bowl, beat together butter and shortening; gradually add sugar, creaming until light. Add vanilla, then add eggs one at a time, beating well after each. Add dry ingredients alternately with buttermilk, ending with dry ingredients: mix well. Pour into prepared pan.
Bake for 30 minutes or until cake tests done.
Top with Broiled Coconut Topping while cake is still warm. Place under broiler 4-5 inches from heat, for about 4 minutes or until golden brown.
BROILED COCONUT TOPPING:

1 cup packed brown sugar
2 Tbsp light cream
1 cup flaked coconut
Cream together butter and brown sugar. Add cream; mix well. Stir in coconut. Spread over warm cake.
