Recipe: Oatmeal Date Bars (oatmeal cookie crust with cooked date and nut filling)

OATMEAL DATE BARS

FOR THE DATE FILLING:
1 lb. dates
1/2 tsp. salt
3 tbsp. sugar
2 1/2 cups water
1/2 cup raisins
1/2 tsp. lemon juice
1/2 cup nuts
FOR THE CRUST:
3/4 cup shortening
3/4 cup brown sugar
1 1/2 cups flour
1 tsp. soda
1/2 tsp. salt
1 3/4 cups oatmeal

TO PREPARE THE FILLING:
Cook ingredients together until thick. Set aside to cool.

Preheat oven to 350 degrees F.

TO PREPARE THE CRUST:
Mix ingredients for the crust together until crumbly. Pat 3/4 of the crust mixture into a 13x9-inch baking pan.

Spread the cooled date filling over the crust. Sprinkle reserved crust mixture on top. Pat down lightly.

Bake at 350 degrees for 30 minutes.
